White Bean Carrot Soup

I had always dreamed of traveling to Europe. I read the Sunday travel section of the newspaper religiously, but could never afford the trip. In the late 1990’s a good friend threw me a teaching gig there. I made no money, but I had no expenses either. I taught a photography workshop, toured Florence, Siena, and the hills with the group, and was fed fabulous meals at a pensione in Tuscany.

I am well-fed enough that I can often deduce the ingredients in a dish, but I could not discern the spice in the bean soup. I asked the owner/cook and learned that it was sage.
